Simple Chicken Rice soup (made mostly from leftovers)

I made cornish hens with red potatoes, carrots and onions on a Saturday night. So, Sunday I was deciding what to do with the leftovers and this is what I came up with……

I started my soup with some olive oil, garlic, onion and squash and sauteed it the bottom of my soup pan.

I added some water and brought it up to a boil and then added my chicken. I re-seasoned with some pepper, and chicken stock and then added my left over vegetables.

The last thing I did was add instant rice (cook according to package directions) and that was all! Took 15 mins total! You can use any kind of leftover chicken or veggies… Be creative! This is something that you can make ahead also, and got re heat when you are ready to eat. Enjoy!

New name… new POV

Well, I am new to all of this, so I may keep changing my point of view until it is something that clicks. I seem to be doing more of cooking recipes instead of reviewing restaurants, so I am going to go in that direction. Everyone knows how hard it is to work full time at your regular job and then come home and work your full time second job, so I am going to share recipes that are simple or simply made from leftovers for your hectic life.

Mrs. Potter’s Coffee Lounge & Cafe

2014-05-22_12_09_48This is the Create Your Own Turkey Sandwich Panini from Mrs. Potters Coffee Lounge Cafe. It was very reasonable priced. We went at lunch time on a weekday and there were 8 of us. We got seated right away, the service was great and the food was delicious. They have so many different panini‚Äôs to choose from. I also got the Chai Tea Latte, so good! I would recommended Mrs. Potters Coffee Lounge Cafe to everyone. Oh, and by the way, I do have a panini press….

My New Blog!

Hello and welcome! My name is Kristin. My dream for the last few years has been to own my own food truck. As of right now, I am planning to make my way into the food industry business via a catering company: Catering by Kristin. Sometime soon, I hope to turn that business into a food truck!

This is my new blog; dedicated to reviewing delicious food around the Louisville, Kentucky area. I am also going to share some of my recipes and I would like to see some of yours! I may even try to recreate a recipe or two.
